The Brod & Taylor Folding Proofer creates an environment of consistent low-temperature warmth that is vital for many kitchen processes. Gentle and consistent radiant heat rises from the aluminum base plate. Digital temperature controls provide settings from 21–49C.
A thermostat in the base of the Proofer controls the heat within a narrow range, making the Proofer much more consistent than yogurt makers, dehydrators, or ovens on proof settings. Food is warmed with radiant heat from the base and is generally stable within several degrees.
The Brod & Taylor Folding Proofer used in Dry Mode is best for making yogurt, chocolate, butter, tempeh, kifir, kombucha, sour cream, creme fraiche, cheese, and natto. Simply remove the water tray and place containers on the rack above the heating plate.
The Folding Proofer & Slow Cooker used in the Slow Cook Mode is best for traditional slow cooking, making black garlic, and sous vide cooking. Simply place your metal covered metal pot directly on the heating plate.
For slow cooking in the Proofer both the rack and the water tray are removed. Set the temperature on the digital panel according to what is specified in the Brod & Taylor recipe you are preparing.

good but not the highest quality the metal grill doesn’t seem to fit the rest of the proofer. It firmly rests on the edges but the middle is just suspended over the metal heating surface. When items with any weight are put onto the wire rack, it distorts until the feet touch the bottom. The corners of the extension box that unfolds when in use don’t match very closely, presumably allowing a ton of warm air to escape. I would like it better if the top could hinge up when resting on the extensions when in use. Other than that, my proofing times have been much more consistent and I love having control over fermentation temperatures. It’s good but maybe not worth the price of a premium piece of kitchen equipment.

Works beautfully! I started baking as a teenager in 1972. Baking became my career, which I retired from Oct, 2, 2020. I’ve always baked at home, but, not having a proof box in which to raise the yeast products has always left my results lacking. I found this folding proof box when, out of frustration, I googled proof box. The reviews were good, so I went ahead and bought one. I can’t believe how well it works! It is very well thought out, simple to use, and stores away neatly when folded. My wife gave me “the look” when I told her I was buying it, only because of the storage space she assumed it would take. She has been converted! I doubt if I will use the unit as a slow cooker, but, as a proofing cabinet, it is the cat’s meow!

So glad I purchased this I started baking sourdough bread this year, and my house during the summer months was just fine, but come the late fall, I no longer could predict how long it would take to perform bread rises, or when the sourdough starter would be ready to use. Starter seems to love temps around 75-79, and my bread rise loves 81 the best. Not only does this proofing box control the temperature, but adds needed humidity at the same time. It folds up flat when not in use, and big enough to rise two 1.5 lbs loaves of bread in their bowls. I just wish I invested in this appliance a couple of months ago.

My new favorite gadget! I live on the east coast where summers are hot and humid and winters are cold and dry, and this proofer is the perfect gadget to deal with the weather variances. It easily fits 2 loaf pans or a 6 quart dough bucket, is easy to set up and use (and clean!), and folds flat for convenient storage. I have gifted this to two of my baking friends who have fallen in love with it as well. I don’t cover the dough, but the humidity prevents any crust from forming. Great proofer for a cold environment I love this proofer with a great form factor and an easy to use interface. Only downside is that when my apartment is 60 degrees F, I need to set the proofer at 87 degrees F to register 80 degrees F on a thermometer. Seems like the side walls could be a bit better at insulating, otherwise awesome product! Folds flat when I am not using it and large enough to fit all my items with ease. My bread and baking has continued through the winter with ease.

A simple fix for a vexing problem Hawai’i’s climate is normally compatible with bread proofing and sourdoughh making, but when the nights started getting colder and the daytime temperature wouldn’t heat the house above 78F, bread wasn’t rising. This ingenious device creates the ideal temperature all the time! It is easy to put together and take down, takes up little space, and uses minimal power. I really appreciate it! I hope at some point you will be able to manufacture it in the USA or Canada; I would pay a little extra for a domestic product.

I love this proofer I’ve never been able to get my bread to rise much since I keep my house on the cold side. I usually put the oven on and put the bread dough near the oven vent to get it to rise at all and it takes a long time With the proofer my bread was fine in a reasonable amount of time. I made the brioche recipe that was in the book that came with the proofer and it was delicious and easy to make. My daughter who went to culinary school said it was very good.

Finally, some weather control for my sourdough Like everyone else I tried baking sourdough bread during COVID and had tremendous success, then 4 times in a row I had miserable failures. Our house got colder as summer morphed into winter and my proofing times became absurdly long. This proofing box is amazing! Great gadget! Finally made a decent sourdough loaf. My house is cold, so the starter was always lethargic. Leaving it at 80F did the trick. It woke it up from being in the fridge as well. It does eat up a good bit of space on the counter, but since it folds up, storage is less of an issue. Cooking a pot roast now, we’ll see how it goes. But works great for the bread proofing alone!

perfect for my needs This product came quickly and is as advertised. My husband bought it for me for Christmas (my request, lol). I only wanted it to be able to have a constant temperature for proofing bread dough in my rather cool kitchen that has two doors to the outside. It is perfect for this. I love that it folds up into a fairly flat shape that I can slide in beside my other appliances for easy storage. I have not tried any of the other functions. Important to note you must make sure you get the sides properly set in the little groove else the heat gets out. Not a problem at all, I was just careless the first time.

Great home for starter I recently the slow proofer for my husband who is a baker at a small cafe. Unfortunately it is next to impossible to control the temperature in the bakery this time of year. So far he has been keeping his starter in the proofer and it’s made a huge difference in the strength and consistency of his bakes. Fine proofer and the cord goes where when storing??? Nice unit, worked great on my breads, but then you want to store it. It’s collapses great but there is no place to store the cord, why? It would have been easy to add loop tabs on the bottom as part of the leg design. It’s the fine details that make a product great, verses good or fine. So this product is Fine.

Husband loves it! My husband does all the cooking, so he insisted he needed this to make bread. (We live in a Colorado mountain town, so it’s super dry and temperatures are always changing.) I admit, the bread is great. The consistent temperature definitely helps the yeast, and the bread loaves are better and more consistent in texture, rising, etc.

Folding Proofer I used the Proofer for the first time last evening and when I checked on my dough this morning, everything looked fine. I think I have a winner here. I also put my sourdough starter into the Proofer along with the bread dough and it rose beautifully. I am hoping that going forward my doughs will proof as nicely as my dough did just now. OMG – proofer, slow cooker and CHEESECAKE MAKER! I have had my proofer for almost a year. Within two days of receiving this appliance my slow cooker stopped working. Fortunately, I had the proofer, so I quickly set it up, put the pan in, and kept my fingers crossed that it would work. No worries; it was absolutely perfect! My husband thought it might work wonders on a cheesecake, so we tried that out within the first week of having the proofer. It took hours to set, but the smoothness was unequaled. I did another one yesterday, this time using an old familiar recipe. It took 6.5 hours to set, using the highest slow cooker setting. Today we sliced into it, and it was hands-down the best texture we have ever had in this cheesecake. I would absolutely recommend exploring this idea further. Oh, and yes, I pull it out often to proof bread; as others have stated it provides an even temperature for rising, no matter the time of year. I’ve done sourdough, no-knead, dinner rolls, multi-grain, and cinnamon rolls, among other types. I cannot imagine going back to my old way of doing things!

Works with great precision I purchased this specifically for proofing my (wild yeast) panettone doughs which require long 12-14 hour proofs. Being a biochemist, I put the product specs to the test with a few thermo probes in my dough and this proofer temp control is spot on perfect. I could not be happier and it has made life in our chilly kitchen so much easier now that we have consistent rise times and controlled temperatures. It’s quite light and can be lifted with one hand making it easy to move around if necessary and we love the fact it folds to about the size of a briefcase for storage. How nice to find a gadget that works as promised. We make a variety of bread on a routine basis and this proofer is going to get a lot of use. If they ever do a version 2.0, would love to have a unit that can hold a standard 12″ x 18″ sheet pan. Thank you for making a great product.

Folding proofer Use I am very pleased with this purchase. I bought it to proof bread. Prior to my purchase, my proofing options were room temperature (20C) and the oven bread proofing function which I tested to be about 115 F. It is easy to assemble and use and does the job I want it to do.

Worth the wait After ordering the proofer, I waited several months for it to be manufactured and shipped, it was well worth the wait! I live in the US Pacific Northwest where is it cold for many months of the year and being near the coast my house never gets to “room temperature” required for proofing breads. after receiving my B&T proofer I am a proofing and baking machine. it is easy to clean and store when not in use. Exceeds Every Expectation I anxiously awaited my proofer/slow cooker and it did not disappoint. The design is deceptively simple, and yet I’m continually amazed at the level of temperature control I’m able to achieve. It also retains a relatively cool temperature on the outside, even when the temperature is maxed out on the slow cooker setting. The device is very compact when folded, fitting nicely in my (very small) kitchen cabinets. And the set up could not be easier or more intuitive. The proofing function has changed the way I make bread (sourdough… brioche… pizza dough… literally everything has improved!). I have also had success using it to make clotted cream (a treat I haven’t enjoyed since moving home from the U.K.) and the most beautiful tempered chocolate I’ve ever been able to achieve in my own kitchen. I’ve read complaints about the plug placement, and I agree. But the awkwardness of the plug is no reason to eschew the amazing functionality of this appliance.

Brod & Taylor Proofer and Slow Cooker I saved for quite a while to get this proofer for bread making. I’m happy to say that this proofer is worth every penny that I paid. It works great and saves me so much time when making bread. I make at least 4 loaves per week, and before I got the proofer it took nearly 2 hrs for my large recipe for dough to rise. I appreciate that it now takes less than an hour to rise. Not to mention the fact that it folds away so conveniently, for out-of-sight storage. I definitely recommend this proofer from Brod & Tayler. Great Product – If you’re baking bread that needs to rise regularly My only complaint would be that there isn’t a place to stow the powercord when it’s all folded up. The folding design is great otherwise, but then you have this power cord you have to find a place to put and I haven’t yet but it’ll get put somewhere wrong place or something and then you have to dig to find it vs it folding up/wrapping up somewhere when you collapse it and put it down.

Takes the guesswork out of proofing dough I use this exclusively for proofing dough (mostly sourdough). Living in New England the house is not as warm as one would believe and it can take up to 12 hours to proof the dough. With this proofing box the time is cut to 4-1/2 hours and its perfect. A little expensive but I feel it’s worth it.

Could NOT Be Happier with the Proofer If you are looking to bring your bread baking up a notch, this is what you want. By precisely controlling the environment during primary fermentation and then again during proofing one can tinker with recipes to get exactly the results you wish. If, in the winter, you have a cold, drafty houseÑthis is a godsend. It folds up nicely so that it can be stored in a smaller space (I keep mine in the small, otherwise useless space between the top of my refrigerator and the bottom of the cupboard above). When expanded it is large enough for my needs (including taking my largest Dutch oven without a problem). I can’t recommend it enough!

The Perfect Koji Maker! I bought the Brod & Taylor Proofer and Slow Cooker to grow koji spores for cooking and it’s the best I have ever used. Folding proofer This seems to work well. Even though the folding part is not airtight, it does not use much electricity. I did not give this 5 stars because the lid is not hinged when the box is in use so it is awkward to lift the lid and put something inside.

Happy Happy Happy!!!!!’ I am so pleased with my folding proofer. I could tell the difference in my bread loafs the very first time I used it. I live in the Chicago area and temperature fluctuates within hours to affect the proofing of my dough. I no longer have to worry about this anymore. My dough raises higher and faster. It is well worth the money. My suggestion to Broad & Taylor is to make a case to store the proofer. I know it folds but I want it protected when it is not in use. This is a great and useful product. Bread’s a Rising We have always kept our house around 65-67 deg in the winter and its tough to get bread to rise at those temperatures. I have been making sourdough bread and it rises best within a temperature range of 70-75 deg. Our new Brod & Taylor proofer is perfect for this as we can dial in the exact temperature desired and get consistent results. When you are done it’s a snap to fold up and put away. We love it!

Basically happy I like the fold-away design of this proofer. I have not used it in slow cooker mode. In proofing mode, I don’t know quite what to think. I have not tracked temperature stability; however, I have noticed that the contents of a jar can be significantly lower than setting, depending on ambient temperature. This is mentioned in the manual for “dry proofing.” I’d still like a way to set it so that the contents reach the temperature I need! Also, if this is not possible then the device is over priced.

Love it I love this product. Since my house is very cold, I have been struggle proofing and rising my bread until I found this product. I don’t need to wait for hours after hours. But, I wish second shelf is included with the proofer as it is very expensive. Also, I wish they can have baking tray which is same size as proofer, so I can take my bread out and put it in the oven directly. I am having hard time finding same size baking tray as my proofer.

Disappointed My kitchen is too cold for sourdough proofing. By the time I decided to get a Brod & Taylor proofer, there was none to be found due to the pandemic so I made my own using an insulated bag and a seedling grow pad. It worked ok for the $70 cost but was not as accurate as I wanted.

Sourdough I wanted a temperature of 83-84 for making sourdough bread. In order to get that I had to set the temperature at 80. It holds the temperature at 83-84 very well, though.

How did we live without it? Brilliant proofer, used for keeping cheese warm (my wife makes cheese and some needs to be kept warm overnight), proving my bread – makes it easy to raise retarded sourdough within three hours, and making yoghurt. Slow cooker I tried three times for the slow cooker and to no avail. Could not reach temp. in an adequate amount of time. But I do believe this is a very good way to proof one’s home made bread. It is a very attractive appliance and I also think Brod and Taylor is a very reputable company. But I think that this should not be advertised as a slow cooker.

Good but not perfect It is great for making yoghurt and proofing dough. I find that some heat escapes from the sides – it isn’t a perfect seal. I get around this by putting tea towels over the top. Haven’t used it as a slow cooker. The results I get from making yoghurt using the recipe for the thicker yoghurt is excellent – better than allowing it to set in an oven with a pilot light on. Could be bigger but then you need more room. I think it is particularly useful during the colder winter months when the house is colder and more difficult to prove dough. If you are looking to bulk ferment a large amount of dough, this isn’t going to be for you but if you are going to make 1-2 sourdough loaves then it is great.

loving this proofer I have been baking for many many years in an old drafty house and have truly struggled with proofing methods! I have tried just about everything I’ve come across without the best results. I came across this proofer by accident but am dang glad I did. Its compact but has one hell of a punch. The only thing that I wish was different is the size, it is big enough for standard 9X13 pans but not my beloved cast iron pans which I prefer to glass or metal. Still love the proofer, have only had it for about a month and have already used it more than I can count and would recommend it to anyone looking for an easier method of proofing..

My kitchen tends to be a bit cold and my oven has a proofing function but I can’t use the oven for anything else if I’m proofing in it. This is super easy to setup and use, freeing up the oven. Not sure of the benefits Not sure how it improves the bulk fermentation or increases the size or strength of my starter. I didn’t find the cooking pamphlet very helpful. Given the price, I was hoping for something a little better and reliable. I wanted my starter to look like the one Josh Wiessman’s makes. My didn’t get close. I use rye and wholemeal starter with a ratio of 1:1:1 The starter is 2 months old. I feed it twice daily. Sadly, it seems to respond better on the kitchen table.

Excellent Proofer I’ve been using the proofer for a variety of doughs: pizza, rolls, donuts, etc. It works great and is easy to set up/take down and store. Best Countertop Appliance I Own!
I live on the coast of New England where the winter months can be difficult to prove dough. Your folding proofer has proven to be a great solution for all of my winter bread making. The proofer is well designed, extremely convenient, and easy to use. I recommend this proofer for anyone who’s kitchen makes it difficult to poof dough.

Just What I Needed I use the folding proofer to proof my sourdough einkorn breads. It works perfectly! The french boules, batards, and ciabattas have all come out great. It is so nice to have consistent results. Our house gets extremely dry in the winter. So I have found that I still need to cover the dough to prevent development of a skin even with water in the tray, but that is fine with me. I no longer have to worry about the house being too chilly or warm.

Perfect for my Sourdough I live in a very old, New England home and keeping my sourdough starter on the countertop during the bitter cold winters is difficult and unpredictable as we turn our heat down low in the evenings to save energy costs. To have this perfect size proofing box that uses minimal energy to keep my sourdough starter happy and healthy at a consistent temperature has been such a blessing and it is stronger than ever! I proof my bread and other baked goods in the proofer and it makes my life as a baking blogger and recipe developer so much easier. It is a fantastic investment if you bake a lot with yeasted doughs like I do!

Consistency Consistent temperature is key to achieving fabulous sourdough starters and breads. We are so impressed with this bread proofer. It’s doesn’t take long to see and taste the results. Our sourdough starters become lively overnight, our breads rise in half the time. Fabulous bread proofer. Wonderful appliance! A great little appliance, I am using it to keep my sourdough starter at 73 degrees. I also used it to make yogurt, quite successfully.

Perfect!!! Exactly what my cold, drafty kitchen needed. My bread is turning out with great texture, crumb and crust thanks to the Proofing box. Storage is easy once folded. Folding Bread Proofer I gave this product to my husband for his birthday at the beginning of December. He has already used it several times and he loves it. He gets more consistent results when the dough is rising for baking bread and making homemade pizza crust.

Game changer As much as I love to make my own bread, it was nearly impossible in the winter. The best thermostat for winter fuel savings had my poor dough practically shivering in the bowl. It certainly wasn’t rising sufficiently to provide good bread. The bread proofing box has turned my occasion indulgence into weekly enjoyment. Next up: homemade yogurt!

Must have! After trying to make bread unsuccessfully during a period of cold weather, I finally relented and ordered the proofer. Now I can make bread anytime with predictable results. Also, I no longer need to use the oven light to keep the temp warm and risk overheating the starter or dough. I can leave the starter or dough and not have to set an alarm to remind me to check on its progress. It’s a little pricey but enjoyable to use.

Brod&Taylor Proofer I avoid breads unless I bake. No knead breads that require 12 hour proofing, sour dough to multi grain breads are now easily produced with precise rise and texture. I will use as a product fermenting device for all the products Brod & Taylor include in their recipe book plus. The small foot print that makes for easy storage proves big things can come in little boxes. From my think outside the box list that prompted me to buy- it holds 24 one lb jars of honey to de-granualize (works great at 120 deg setting) and in a pinch I know it would incubate eggs. I want to see a review from the person that does this.

Great Thing except… This proofer box is awesome. It can do a lot of useful things (I’d never have bought it just for bread, I don’t even own a food processor!) – including the less obvious warming dishes and reheating leftovers in their glass storage.

Didn’t think I needed it, I was wrong At first, this seemed like a gadget that could be replaced with things I already own such as an oven. And to be honest, yes, you can use your oven or other kitchen appliances in place of the proofer. However, the proofer makes work so much easier. I make my own dairy free yogurt. I culture my yogurt for 12 hours and I know it will come out perfect because it remains at a steady temperature throughout. Store ought vegan yogurt doesn’t even compare. I also make croissants, and everyone who has ever made croissants will know, correctly proofing them is as crucial as all the other steps. It’s a delicate process and after putting in two days of work laminating, turning and sheeting the dough, the last thing you want is for the process to fail at the proofing stage. That’s days of work wastedÉ.and I’ve been there before. Now I know I can trust the proofer to keep an accurate temperature where my croissants will proof undisturbed and the butter inside won’t melt. No more underproofed croissants with pools of butter in the oven! I just wish it could accommodate a half sheet pan, but I just use the additional rack shelf and place two quarter sheet pans instead. If anything ever happens to mine, I already know I will fix/replace it.

The best thing I have ever bought since my kitchen aide mixer I watched Joshua Weissman using this and it made me want to get one to get back to baking breads. In New England I could never get my breads to raise and when I did, I wanted to not do them since it was like six to eight hours later. Then that would mean another proofing time which would be three hours later. With this proofer I was able to do English muffins starting at 6 and making breakfast with them by 8:30. I can’t wait to use it and it hasn’t been put away since I got it. I have made pretzels, English muffins, pullman loaves, bao, hot dog rolls, ciabatta rolls and sour dough. I’m having fun with yeast doughs using this proofer. I would highly recommend this to anyone in New England or Northern states that have older houses that keep your doughs from raising quickly.

Seriously Amazing! The B&T Folding Proofer and Slow Cooker is seriously amazing! It’s been in constant use since purchase, and I can honestly say both functions are excellent. My Sourdough Starter Loves This Proofer I’ve read articles and watched videos explaining the importance of consistent temperature and humidity during the sourdough bread-making process. I also knew that my Pacific Northwest kitchen’s temperature fluctuated from 18¡C to 29¡C. The Brod & Taylor proofer proved the articles and videos correct! My starter and bulk fermenting dough remain constant at 28¡ C, allowing my 1:5:5 ratio starter to double in less than three hours and become fully active within 5 hours. Bulk fermentation is equally consistent.
