Important notice: For proofing, we recommend simply laying the lid on top and to not push the lid all the way down. Pushing the lid all the way down will create an incredible airtight seal which will however make it difficult to remove the lid for some customers.  If you need an airtight seal, or you accidentally pushed it all the way down and struggle to separate it with your fingers, you can very easily lift the lid off again using a metal spatula or the end of a metal spoon/fork and prying the lid up on one of the corners.
