WELCOME TO THE COLD FOAM PARTY
Blendtec have developed a new jar which turns 150ml of cold skimmed milk into silky smooth, mousse-like thick foam in only 18 seconds. Whether used on its own to top iced coffees, or flavoured with any number of other ingredients, it’s so quick and simple to achieve.
Becoming a firm staple with high-street chain and independent coffee shops this is the easy way to add a specialty cold coffee to your summer menu. No need to invest time or money in nitro or cold brew equipment. Another benefit? The method is suitable for any staff who have already been trained in operating a blender, unlike other more involved specialty cold coffee options.
THE SCIENCE OF COLD FOAM
While in operation, the cold foam jar performs 2 main functions:
- Produces air that is dispersed within the milk during a liquid or aqueous phase, known as an “in air interface”.
- Unfolds water soluble proteins within the milk, which bond to each other and stabilise the air produced within bubble walls, causing the milk to foam.
HOW TO MAKE COLD FOAM:
- Add 150ml cold skimmed milk to cold foam jar
- Blend for 18 seconds on the small milkshake cycle on any Blendtec blender

What is cold foam?
Cold foam is the chilled equivalent to steamed milk. Use it to top iced cappuccinos instead of traditional hot coffees.
What can I use cold foam for?
Cold foam can be used as a low fat, low sugar decorative way to top drinks or served as a whole drink in itself.
Do I need a new blender to make cold foam?
No, you can use a Blendtec Cold Foam jar with any Blendtec blender.
Why skimmed milk?
Semi-skimmed and whole milk contain more fat, so are less effective at forming a cold foam. The presence of fat weakens the protein structures, inhibiting their bond formation and subsequent ability to trap air.
Can I make cold foam with soya or dairy-free milk?
We’ve tried it with a variety of dairy-free options and the majority do not work well due to the ratio of protein and fat in the liquid. This may not be the case for all dairy-free milks, so we recommend testing some recipes for yourself.
Is cold foam fattening?
A cold foam drink is made with skimmed milk, which itself is almost fat-free. It would depend on what you serve the cold foam with as to how fattening your overall drink is of course.
Can I use a cold foam jar on a different brand blender than Blendtec?
The cold foam jar will only fit onto Blendtec blenders. The new Blendtec Rebel+ jar works with Vitamix blenders but does not make cold foam.
Does cold foam float on top of liquid?
Yes, cold foam can be used as a light whipped topping to coffees or hot chocolates, or cold smoothies and frappés. It’s a great low fat alternative to whipped cream on a hot chocolate.
Can you use cold foam to top hot drinks?
Yes, we recommend with coffee or hot chocolate, it will just melt into the drink quicker than a cold drink, much like whipped cream.
Can I make cold foam with hot milk?
Cold foam must be made with chilled milk, as colder liquids are more viscous which plays an important part in helping to trap air bubbles in the milk. Keep the skimmed milk refrigerated, it works better the colder the milk is.
Is there a demand for cold foam?
Cold foam is fairly new to the market but already on the menus of Starbucks and Costa. Current market trends for reduced-sugar indicates that cold foam will become very popular.
Will cold foam melt?
Cold foam will not fully return back to milk, instead it may become bubbly and loose its glossy, peaked texture.
Can I use the cold foam jar to make blended drinks?
The Blendtec Cold Foam jar can only be used to make cold foam, and regular bladed jars cannot be used to make cold foam.
Can I add other flavours to cold foam?
Oh yes! We’ve had so much fun creating all the recipes on the next page. Our one tip? Start small. It only takes a tiny amount of anything to flavour the foam, and too much of anything interferes with the process. Neat cold foam gives you a lovely meringue like texture whereas cold foam with flavour is a little more flowing, but just as delicious.

How many drinks can I make with one cold foam portion?
A 150ml measure of skimmed milk makes enough cold foam to fill a 12oz cup – or more than enough to top two caffe freddos.
Can I make more than one portion of cold foam at once?
We have made a double portion, with 300ml skimmed milk, and it worked although we find the best results are with one 150ml serve.
Can I pre-make cold foam?
Cold foam needs to be made to order. Although it does hold its density left to sit you end up with runny milk at the bottom which dilutes any drink you are serving it on.
How long does cold foam stay a foam?
Long enough for customers to enjoy it to the end of their drink!
Can I use less than 150ml skimmed milk?
As long as the blade is fully covered the milk will foam.
GET YOUR BLENDTEC COLD FOAM READY
Whichever model you have it’s easy to programme for cold foam. Follow the steps below if you don’t already have the small milkshake profile set.
Simple solution:
Use the Multipurpose profile where button 1 will run at speed 1 for 18 seconds and make perfect cold foam.
If you need to change the profile from either Coffee or Smoothie to Multipurpose simply press buttons 3-P-3 in sequence.
To install the cycle on an existing profile Coffee, Smoothie or a custom profile, follow the procedure below:
- Start the button programming code by pressing buttons 2-4-P sequentially. (display will read “Push Button”)
- Press the button you want to install the programme on (display will then ask you to “Enter Cycle”)
- The cycle you want in the small milkshake cycle so press buttons 1- 3 to install the programme. The blender will beep twice and the selected button will now run an 18 second cycle at speed 1 – which makes perfect cold foam.
Simple solution:
Use the Multipurpose 3 profile where the Small button will run at speed 1 for 18 seconds and make perfect cold foam. If you need to change the profile from either Multi 1 or Multi 2 to Multi 3, turn off the blender at the power switch then within 10 seconds of turning it back on simply press buttons Large – Pulse – Small in sequence.

Use the Multipurpose profile where button 1 will run at speed 1 for 18 seconds and make perfect cold foam.
If you need to change the profile from either Coffee, Milkshake or Smoothie to Multipurpose follow these steps:
- Enter the programming mode by touching and holding the Red X icon for 3 seconds
- Touch the Tick icon to select Profiles
- Select Standard Profiles by touching the Tick icon
- Scroll down using the Downward Arrow to option 3 which is Multipurpose and touch the Tick icon to select it.
- The display will read “Make this the active profile?” – touch the Tick icon to load this profile.
To install the cycle on an existing profile Coffee, Smoothie, Milkshake or a custom profile, follow the procedure below:
- Enter the programming mode by touching and holding the Red X icon for 3 seconds
- Touch Down Arrow to scroll to Blend Cycles and touch the Tick icon to select
- Select Standard Cycles by touching the Tick icon
- Scroll down using the Downward Arrow to Cycle 10 which is the Small Milkshake cycle and touch the Tick icon to select it.
- The display will then prompt you to choose which number on the control panel you want the cycle to be assigned.
- Touch the number then touch the Tick icon to program the button with the selected cycle.
- Touch the Red X three times to leave the programming mode and the blender will be ready to blend.
IN THE COLD FOAM KITCHEN
Cold foam is great on its own, used as a topping on all kinds of coffees but start adding any number of other ingredients for light, yet delicious creations.
Making any of the drinks shown below, or creating more recipes of your own is so very easy. Once we started mixing and matching ingredients and seeing what worked, we were hooked on cold foam.
Our tips when developing your own recipes is to start small with the amount of anything you add. Cold foam is such a fickle thing, too much of anything and it won’t foam. Just the right amount and you will have delicious flavoured foam to top, or make whole drinks at minimal cost. Don’t feel limited to cold drinks – we used cold foam to top our turmeric hot chocolate as a low fat alternative to whipped cream and it’s delicious.
Start with the basics
- Pour 150ml of cold skimmed milk into to a Blendtec cold foam jar
- Blend on cold foam setting
- Pour foam into cup or to top your latest creation
